1 cup Whipping Cream

½ package of Unflavored Gelatin

4 tablespoons of cold water

¼ cup boiling water

¼  cup Sugar

½ cup Dark Cocoa

1 teaspoon Vanilla

Bittersweet Chocolate Orange Balsamic

Take your gelatin and place in into a bowl. Add your cold water and let the gelatin dissolve.  Meanwhile take your whipping cream, sugar, cocoa and vanilla and beat mixture until it is all combined.  Add your boiling water to you gelatin and mix well until fully dissolved, slightly chill and add to your whipping cream mix.  Beat until mixture begins to become stiff.  Place mousse into serving dishes and refrigerate for 1 hour. Before serving, drizzle some Bittersweet Chocolate Orange Balsamic over the mousse, place some whipped cream over the balsamic add 3-4 fresh raspberries on the whipped cream and drizzled a little more balsamic.
