Preheat oven to 400 degrees

1 egg
1/2 cup milk
1/4 cup meyer lemon olive oil
1 1/2 cup granulated sugar
2 teaspoons baking powder
1 3/4 cup flour
1 cup fresh blueberries

In a large mixing bowl combine all ingredients. Mix lightly, pour into greased muffin cups. Bake 20-25 minutes.
Cool and remove from tin and drizzle blueberry dark balsamic over them or just eat them warm. Yummy for breakfast or just to snack on!
