4 (4 ounce) pieces of Salmon
1 Tablespoon Basil Olive Oil
¼ cup chopped fresh Basil
3 Tablespoons Capers
1 Zest of Lemon
2 Tablespoons Lemon Juice
2 Cups of Baby Spinach Leaves

Whole Wheat Spaghetti – Bring a large pot of salted water to a boil. Add
pasta and cook 8-10 minutes. Drain pasta and add 2 tablespoons of garlic
olive oil. Salt and pepper and set aside.

In a hot skillet over medium heat add 1 tablespoon basil olive oil. Add fish
to the pan and cook until medium rare about 2 minutes on each side.
Remove from pan.

Add your fresh basil, capers, lemon zest, and lemon juice to the pasta.

Plate fresh spinach leaves, top with the pasta and place a piece of salmon
on top of the pasta and serve.
